An oshiki is a tray used to serve a single person's meal, and has been used not only in Kaiseki cuisine but also by common people since ancient times. Placing dishes directly on the table can look cluttered, but an oshiki acts like a frame, highlighting the food.

While an oshiki may look similar to a tray (bon), there is a slight difference. A bon is used for carrying things like dishes, whereas an oshiki, as the name suggests, is meant to be laid down. In the past, people used to fold leaves and lay them down as a substitute for dishes, which is how the name oshiki (folded leaf) came about. They come in various shapes, such as half-moon and round.
Additionally, trays are used for carrying meals and drinks, similar to bon, while placemats are used to set out a single person's dishes and stylishly decorate the dining table.

■ How to wash and store oshiki
Gently wash with a mild kitchen detergent and a soft sponge or cloth. After washing, wipe off any moisture with a dish towel. After use, store in a location away from direct sunlight.
